2) I went to Russia on spring break
3) I have been scuba diving in Costa Rica.

Not so sure about your husband's.
Hmmm.
I am thinking #3 is true. Googled him and found that he really likes tennis.
So I am deciding between #1 and #2.
It SEEMS like #2 wouldn't be true (#1 has juicy detail and thus, sounds like it has a grain of truth to it), but I think you would write #1 that way so people would think it's true. However, one small change (30 minutes vs. several hours) could make it false.
I'm going with #2 but in a strategic way, not in a "has no details so is obviously false" way.
Your husband writes poetry?
I have not seen said "poetry", but I know that that "soccer" and "chess" rhyme with a lot of things so I strongly suspect that this may have been the basis for some of the verse.
